Sassy Strawberry Bundt Cake

Deliciously Soft Cake

The flavor of green tea infuses perfectly into this classic Sassyfras bundt cake recipe. Every bite of this fluffy cake contains a hint of green tea, a whisper of strawberries, and the delicious flavor of vanilla. This is a wonderful dessert for any occasion, so roll up your sleeves, grease that bundt pan, and get ready to bake!

    Bundt Cake Ingredients

    • 1 1/2 cups (3 sticks) unsalted butter, softened
    • 2 cups granulated sugar
    • 4 large eggs
    • 2 tsp. vanilla extract
    • 3 cups all-purpose flour
    • 6 tbsp. cornstarch
    • 2 tsp. baking powder
    • 1 1/2 tsp. salt

    Sassyfras Icing Ingredients

    Recipe: Sassyfras Strawberry Bundt Cake

    1. Preheat oven to 350° and grease a 12-cup bundt pan with cooking spray
    2. In a large bowl, use a hand mixer to beat together the butter and sugar until light and fluffy
    3. Add eggs one at a time, beating well after each addition. Add vanilla extract and mix until combined
    4. In another large bowl, whisk together flour, cornstarch, baking powder, and salt
    5. Add half of the dry ingredients to the wet ingredients, beating until just combined
    6. Pour in the milk and the Sassyfras Strawberry concentrated tea and mix until full incorporated. Then add remaining half of the dry ingredients and stir until just combined

    7. Pour batter into the greased bundt pan and smooth the top with a rubber spatula. Bake until a toothpick inserted into the middle of the cake comes out clean (about 55 minutes)

    8. After removing from the oven, let cake cool in pan 10 minutes. Then invert onto a cooling rack to cool completely

    9. While the cake is cooling, make icing!

    Sassyfras Icing

    1. Whisk all ingredients together until the icing is a smooth consistency (if the icing is too thin, add a little more confectioner’s sugar. If it’s too thick, add a little more milk)
    2. Drizzle icing over cooled bundt cake. Cut the cake and serve! This cake goes great with a dollop of strawberry jelly and a hot tea
