Caramel Apple Cookies

These incredibly rich cookies are infused with the flavor of our Caramel Apple Pie seasonal tea. Not only that, they are completely vegan! Bake these soft, delicious cookies that you can share with anyone and revel in the sweet caramel flavors of Autumn. All you need to do first is prepare a batch of concentrated tea (Caramel Apple Pie, of course) and grab your ingredients! Then just follow our recipe here and enjoy amazing Caramel Apple Cookies.

Cookie Ingredients

  • 3/4 cup vegan butter, softened to room temperature
  • 1 cup granulated sugar
  • 3/4 cup dark brown sugar, lightly packed
  • 5 Tbsp apple sauce or apple butter*
  • 5 Tbsp Caramel Apple Pie concentrated tea
  • 3 + 1/2 cups all-purpose flour
  • 1/2 cup old-fashioned oats
  • 1/2 cup pecans, finely chopped
  • 1 Tbsp corn starch
  • 1 + 1/2 tsp baking soda
  • 1 tsp coarse Kosher salt
  • 2 Tbsp cinnamon
  • 1/4 tsp coriander

*best w/ P&L Apple Butter (infused w/ Caramel Apple Pie)

Frosting Ingredients

  • 1 cup powdered sugar
  • 4 Tbsp Caramel Apple Pie concentrated tea
  • 2 tsp cinnamon

Recipe Instructions

  1. Grab your stand mixer and fit it with the paddle attachment. In the mixer bowl, beat together: vegan butter, granulated sugar, and dark brown sugar. Beat for 4-5 minutes, scraping the bowl several times, until the mixture is fluffy
  2. Beat in the apple butter one tablespoon at a time, then beat in the Caramel Apple Pie concentrated tea. Scrape the bowl again and beat to combine well
  3. In a separate bowl, combine all the dry ingredients (flour, oats, corn starch, baking soda, salt, cinnamon, and coriander)
  4. With the mixer on low, add the dry ingredient mix one spoonful at a time, mixing until just combined. If needed, use a spatula to incorporate all the flour
  5. After mixing, use a cookie scoop to portion the dough into balls. Place the balls of dough on a baking sheet lined with parchment paper and then flatten each ball with the palm of your hand

6. Preheat the oven to 350. Bake the cookies for 8-10 minutes. Allow the cookies to cool on the pan for several minutes, then transfer to a wire rack to finish cooling

7. While the cookies cool down, prepare your frosting! Combine the powdered sugar, Caramel Apple Pie concentrate, and cinnamon in a small mixing bowl. Beat the mixture until it is smooth

8. When your cookies are sufficiently cooled, drizzle the frosting. All that's left now is to take a bite and enjoy!
